If you are using a panini machine or a countertop grill, go ahead and get the heat started.
Slice the bread to about 1/2" thick. Spread 1 tbsp of fig butter on one side, and 1 tbsp of grainy mustard on the other side.
Spread 1 ounce of the goat cheese over the fig butter slice. Add a few leaves of spinach, enough to cover the whole slice. Add half of the sliced pear over the spinach. Cover with the grainy mustard slice.
Heat in the panini press or countertop grill for about 3-4 minutes, or heat over the stovetop with a skillet for 2 minutes on each side.
This is pretty amazing when paired with the cream of carrot potage or the French salad!
